'tis the season

 

This really is the best peanut brittle ever.

 

Old Fashioned Peanut Brittle

 

Ingredients:

  • 3 cups sugar
  • 2 cups water
  • 3/4 cup dark corn syrup
  • 3/4 cup light corn syrup
  • 2 Tbsp unsalted butter
  • 2 lb salted peanuts
  • 1 tsp vanilla extract
  • 1 Tbsp baking soda
  • Cooking Spray (I use butter flavor)

Directions:

Combine the sugar, water and both corn syrups in a big soup pot and place over medium heat stirring until the sugar dissolves. Clip a candy thermometer on the side of the pot, then increase the heat to high and boil without stirring until the temperature reaches 260 degrees F. About 30 minutes.

 

Meanwhile, spray 3 baking sheets with the cooking spray.

 

When the temperature reaches 260 degrees F, reduce heat to medium-low, add the butter and peanuts and stir constantly so that the peanuts don't ever rest on the bottom of the pan or they will burn. Continue until the temperature reaches 295 degrees F. About 15 minutes.

 

Turn off the heat, add the vanilla and baking soda. Stir to combine completely. The mixture will puff up at this point. Pour immediately onto the prepared baking sheets and spread into a thin layer. Allow to cool for a few hours and then break into bite sized pieces.

 

Makes 6-7 gift bags of 10 oz each.

nice. the key is the timing of how long to let them set up and how long to mix / beat them.

Yeah, it seemed like the cooling trays we laid out the first pralines were the last to set up. I think we could have beat them a little more to get a firmer set, but they all came out fine...
