kidsmoke Posted December 15, 2011 Share Posted December 15, 2011 Even more than Thanksgiving time, the Holiday season seems to be when everybody pulls out all the stops with favorite recipes. Whether it is specific holiday treats, or simply cozy winter dishes, what wonderful flavors are floating through your household? I haven't begun any Christmas baking yet...waiting for the kids to be finished with this last week of school, since they like to help. Then we'll make molasses crinkle cookies and maple-walnut fudge and other favorites. For now, we're enjoying warm, fragrant meals like the fabulous chicken & sausage & peppers & onions I made the other night, and turkey tetrazzini linguini (which is as good to eat as it is fun to say). alison the wilca Posted December 15, 2011 Share Posted December 15, 2011 this year i've made ginger molasses cookies, peanut butter cup cookies, and peanut butter cookies with toffee and pretzel bits. tonight I also made little italian meatballs for a holiday potluck tomorrow. my ginger molasses cookies are my fave- I made 5 batches of dough Thanksgiving weekend and froze them so that I could bake them whenever I needed. Probably the most creative thing I've pulled off lately was pieced together from seemingly random ingredients. A chef friend of mine -- who should get on that Chopped show -- gave me an idea of what to do with a couple of chicken breasts, a few onions, goat cheese, and bacon. Rubbed the chicken with some oil and rosemary, smashed, and pan-seared. Grilled the onions until they were nice and soft. Cooked the bacon until it was somewhat crispy, then chopped it up. Rolled the goat cheese log over the chopped bacon, then sliced into medallions and covered with the grilled onions. Served with smashed chicken, wine, and a good loaf of bread. Also recently, pictured below. Grilled country-style ribs w/bruschetta salad and grilled, seasoned potatoes. And grilled chicken bruschetta with oven-roasted asparagus. I love to cook from scratch and do so often, a necessity at my house because of my food sensitivities and my husband's diet that keeps an autoimmune disorder under control. However, this time of year is insane due to extra workload at work and the holidays in general. Therefore, Subway and Taco Bell were in our menu this past week! I did manage to make turkey & black bean chili just for myself last night. No doubt the kids and I will make Christmas cookies this weekend or next week. The kids love frosting cookies nearly as much as they do eating too many of them. I like baking from scratch because I can secretly reduce the amount of sugar and use pure vanilla and real butter rather than margarine or other fabricated substances. My kids love my homemade spaghetti sauce. Plus, I'm a major fan of caffeinated beverages these days (couldn't parent without them!), so holiday coffee and tea blends have been a staple every morning and afternoon. I checked my favorite bread book, but alas, no english muffin recipe. I could get one off the internet but I'd rather go with one that's tried & true. Awesome stuff. I am a recent soy milk convert and this (honestly) tastes better than the Real Thing. I've heard that Silk brand is the best out there. Is it expensive? I've heard that Silk brand is the best out there. I'll second that! Silk also makes a decadent mint chocolate soy milk for the holidays and a pumpkin spice version every autumn.
