NoJ
might as well add celery. That would be weird. What is this, a buncha pepper haters around this place?
NoJ
The chili verde I made one year was universally scorned and yet it was one of the most amazing chilis I've ever made/eaten in my life. I can handle rejection from heathens and the ignorant.

PopTodd
Yeah, its all part of the deal. Ketchup is an invasive condiment when it comes to the proper makings of a Chicago dog and should be kept cordoned far far awayThis.
Hixter
All this talk of chili has encouraged me to make a pot and it's happily simmering away. No beans or tomatoes.
NoJ
All this talk of chili has encouraged me to make a pot and it's happily simmering away. No beans or tomatoes. Is it filling? A chili, IMHO, should be a meal in a bowl....hence all the veggies, beans, lentils, beef, etc.
Winston Legthigh
I'm getting a hankering too. Good thing the Wick Fowler chili kit is available in my local grocery stores. Easy to make. But I may splurge and try one of the ICS recipes I was looking up yesterday. There will be pinto beans in my chili, but only because the Missus requires it. Happy wife, happy life. Hixter
Is it filling? A chili, IMHO, should be a meal in a bowl....hence all the veggies, beans, lentils, beef, etc.I guess it depends how much of it I eat. I've never understood the concept of filling, especially when it comes to beer. I've never experienced any food or drink that filled me up more than a similar quantity of another food or drink. The stuff I made today used 4 or 5 kinds of peppers, beef, onions, garlic, stock and assorted spices. Hopefully it'll turn out well. EDIT: Oh yeah, I threw in 12 ounces of my homebrew (a British bitter) for the heck of it. Heading to Denver tomorrow for the Great American Beer Festival.

Hixter
It sure smells good. My kitchen is a wreck, however. I'm the messiest cook in the world. I need to work more efficiently.
Hixter
Finally tasted a bowl and it's pretty good. The photo is a bit washed out -- it's much darker and redder -- but you get the idea.
Winston Legthigh
What cut of beef do you use?
Hixter
I usually use chuck, but the ones I found were either way too small or way too large. I found a tri-tip that was cheap and in the right range, so that's what I used.
tinnitus photography
I have never seen tri tip for sale in the north east.
Hixter
I have never seen tri tip for sale in the north east.I don't recall seeing it outside of California, but there it was. There were only 2 of them buried in a sea of chuck roasts and rib eyes.

Moss
I don't recall seeing it outside of California, but there it was. There were only 2 of them buried in a sea of chuck roasts and rib eyes. I remember when I moved back to Colorado from California and would ask about Tri-tip, people had no idea. Not so much anymore, starting to become more popular out here although still a very California thing. Damn Hixter, that Chili looks amazing.

calvino
I am slowly realizing that I do not know what chili is.Me too - Hixter's picture just looked like a bowl of meat (it does look good, but doesn't look like 'chili') Is it even possible to make a veggie 'Texas-style chili'. Not sure what you would use as meat substitute. I or my wife uses TVP in our chili --- but I use beans and tomatoes, etc....
Sir Stewart
I think in Texas 'meat substitute' translates to 'I'll be leaving the state now, sorry.' Chili is the only way TVP is palatable to me. Google Image Search results for 'chili' show beans, beans and more beans. Apparently everybody is doing chili wrong.
